To make Rujak Gula Bali is very easy. First you just need to slice all kind of fruit like mango, papaya, pineapple, cucumber etc. Just make a thin slice. Then, for the dressing we are going to use Balinese palm sugar (Gula Bali). What ever the dressing, usually they make using the same traditional kitchen tool name ‘cobek’. Cobek is made from stone and very useful to pulverize some herb.

Okay now back again to the palm sugar. Put the Gula Bali, Salt, Chili, tamarrind, little bit of ‘terasi’(fermented of baby shrimp) on “Cobek”. Then we need to pulverize all ingredients and put some hot water until become soft. When it’s ready the next step is mixing between slice of fruits with the Gula Bali dressing and the Rujak Gula Bali is ready to eat.
